What is Matcha and how it is produced?

The word comes from the matsu ‘rub’ + cha ‘tea’, from the Chinese (dialect) chá which means tea and is produced from shrubs whose leaves are called tencha.

Although both regular green teas and Matcha come from the same plant, there are differences between them. These differences start from the cultivation process of the plant, the period before the harvest. Matcha green shrubs are covered by direct sunlight for about 20-30 days before harvest. In this way the leaves produce more chlorophyll.

After harvest, the leaves pass through the sterilization process. The dust resulting from the processed leaves is called Matcha.
